#EW023 Freeze-drying

Freeze-drying is a food preservation method involving freezing food, and then removing water through a process called sublimation. That creates an output that is dried, lightweight and has a longer expiration date than fresh ones.

This process may lead to some nutrition loss but it generally keeps nutrients longer than other methods such as drying or canning food. On average, free-drying retains around 90-95% of nutrients found in fresh ones.
